Chablis Faucertaine 2018, Domaine Jean-Hugues et Guilhem Goisot
Production: Organic & biodynamic certified, hand-harvested, natural yeasts, low sulphur
This tiny plot of 0.4 hectares is located in Bienes, north of Chitry and was planted by Guilhem’s father in law in 1976.
The élevage is in used 500 litre barrels and like the rest of the range it displays enormous complexity, richness of fruit with a chiselled minerality.
High-toned and floral with ripe green fruit and citrus. Creamy and chiselled with attractive notes of smoke, roasted nuts and white currants. Layered and complex.
