This comes from certified organic parcels in Viré-Clessé, Chardonnay and Montbellet and the terroir here yields a deeply mineral wine. There are two bottlings of this wine, one with 14 months’ élevage, while the one we receive sees 18 months. There is no oak and one third of the cuvée is macerated for one day before pressing, meaning it gains additional dry extract.
It has a beautifully high-toned nose of confit lemon, mandarin, peach, fresh almond and white floral tones. Pure, precise and textural. Rich and racy with superb density and length and salty minerality. This is a very stable natural wine and Julien says it makes an excellent by-the-glass offering. It benefits from aeration and can be cellared for 10 years. 30 mg/l total SO2
